The
Endrick Mill mills coffee for a number of farms in Zimbabwe.
Each farm delivers dried parchment to the mill. The parchment
is then conditioned to ensure uniform moisture content
throughout the bulk, and to allow the "green taste"
inherent in newly harvested coffees to dissipate.
Once
uniform moisture content has been achieved the coffee
is hulled and graded. The grading process produces the
following main grades.
AAA+:
An
exceptional bold bean passed over a 19 screen. This bean
is ideal for roasters selling whole bean to the retail
shops. The coffee exhibits a number exceptional attributes.
It is a medium body, high acidity coffee, it produces
a completely clean cup with no hint of any undesirable
characteristics. It is ideal for the roaster who would
like to promote "Zimbabwe" as an origin in their
portfolio of coffees. Roasters who would like to make
the Endrick AAA a part of their portfolio on a long term
basis are assured of Endricks continuous support in the
form of marketing material, roasting consultancy, and
other backup services from the Endrick system.
AA
A slightly smaller coffee exhibiting the same characteristics
as the AAA, held by a 18 screen the coffee can be used
in the same way as the AAA.
AB
Held by a 16 Screen, the Endrick AB is the ideal coffee
for blending to increase the acidity and improve the cup
of heavier bodied low acidity coffees. It is also ideal
as a stand alone grinder with medium body medium acidity
but a clean cup character.
PB
Only
a few % of Endricks coffee is PB, sort after by the knowledgeable
gourmet consumer PB exhibits all the character of the
flat bean coffees but with more body. It is very dense
and consequently easy to roast. Small volumes of this
coffee are available from time to time.
